Crushed Chex cereal makes a tasty gluten-free coating for chicken nuggets that are still crispy and full of flavor. These nuggets are great for a quick and filling meal or an appetizer that everyone will love.
Ingredients: 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces. 1 cup gluten-free Chex cereal, crushed. 1/4 cup grated Parmesan cheese. 1/2 teaspoon garlic powder. 1/2 teaspoon paprika. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 2 eggs, beaten. Cooking spray or oil for greasing.
Instructions: Get the oven ready by heating it up to 400F 200C. Crack up some Chex cereal and put it in a shallow dish. Add some Parmesan cheese, garlic powder, paprika, salt, and pepper. Coat each piece of chicken in the Chex mix, then dip it in beaten eggs and press it down gently to stick. Spread the chicken pieces out on a baking sheet that has been greased. To help the chicken brown, add a little cooking spray or oil to the tops of the chicken. The chicken should be cooked all the way through and the coating should be golden brown. Serve hot with the sauce of your choice.
