Ingredients: 2 lbs beef stew meat. 1 onion, chopped. 1 green bell pepper, chopped. 1 cup pineapple chunks. 1/2 cup ketchup. 1/4 cup brown sugar. 1/4 cup apple cider vinegar. 2 tablespoons soy sauce. 2 cloves garlic, minced. 1 teaspoon ginger, grated. 1 tablespoon cornstarch. 2 tablespoons water. Salt and pepper to taste.
Instructions: Place beef stew meat, chopped onion, green bell pepper, and pineapple chunks in the slow cooker. In a small bowl, mix together ketchup, brown sugar, apple cider vinegar, soy sauce, minced garlic, and grated ginger. Pour the sauce over the beef and vegetables in the slow cooker. Stir to coat evenly. Cover and cook on low for 7-8 hours, or on high for 3-4 hours, until beef is tender. In a small bowl, mix cornstarch with water until smooth. Stir the mixture into the slow cooker during the last 30 minutes of cooking to thicken the sauce. Season with salt and pepper to taste before serving.
