Ingredients: 1 cup peanut butter. 2 ripe bananas, mashed. 1/2 cup brown sugar. 1 teaspoon vanilla extract. 1 teaspoon baking soda. 1/4 teaspoon salt. 2 cups rolled oats.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, mix the peanut butter, mashed bananas, brown sugar, and vanilla extract until well combined. Add the baking soda and salt to the mixture, and mix again. Fold in the rolled oats until the dough is evenly mixed. Scoop spoonfuls of the dough onto the prepared baking sheet, leaving some space between each cookie. Use a fork to gently flatten and create a crisscross pattern on each cookie. Bake in the preheated oven for about 10-12 minutes, or until the cookies are golden around the edges.
