Ingredients: 3 cups gluten-free all-purpose flour. 1/4 cup coconut sugar. 1 tablespoon ground flaxseed. 1 teaspoon cinnamon. 1/2 teaspoon salt. 1 cup unsweetened almond milk. 1/4 cup vegan butter, melted. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/2 cup chopped pecans.
Instructions: Preheat the oven to 350F 175C. Grease a bundt pan with vegan butter or cooking spray. In a small bowl, mix together ground flaxseed with 3 tablespoons of water. Let it sit for 5 minutes to thicken. In a large mixing bowl, combine gluten-free flour, coconut sugar, cinnamon, and salt. Add almond milk, melted vegan butter, maple syrup, vanilla extract, and the flaxseed mixture to the dry ingredients. Mix until well combined. Fold in chopped pecans. Scoop tablespoon-sized portions of the dough and roll them into balls. Place the dough balls evenly into the prepared bundt pan. Bake in the preheated oven for 30-35 minutes, or until golden brown and cooked through. Allow the monkey bread to cool in the pan for 10 minutes before inverting it onto a serving plate.
