Berry Crumb Bars are a delightful treat that combines the sweetness of mixed berries with a crunchy oatmeal crust and topping. They are perfect for dessert or a sweet snack!
Ingredients: 1 cup all-purpose flour. 1 cup rolled oats. 1/2 cup brown sugar. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, melted. 1 1/2 cups mixed berries such as raspberries, blueberries, blackberries. 1/4 cup granulated sugar. 1 tablespoon cornstarch. 1 tablespoon lemon juice.
Instructions: Set the oven to 350F 175C and heat it up. A 9x9-inch baking pan should be greased. Put the flour, oats, brown sugar, baking powder, and salt in a large bowl and mix them together. As you add the melted butter, mix it in until the dough is crumbly. Fill the baking pan with half of the mixture and press it into the bottom. Put the berries, sugar, cornstarch, and lemon juice in a different bowl and mix them together. Lay the berry mix out evenly on top of the crust in the pan. Cover the berries with the rest of the crumb mixture. It should be baked in a hot oven for 35 to 40 minutes, or until the top is golden brown and the berries are bubbly. Let it cool all the way down before cutting it into bars.
