These Hoisin Peanut Noodles are a quick and flavorful vegan dish perfect for busy weeknights. The creamy peanut sauce combined with hoisin creates a delicious umami flavor, while the mixed vegetables add freshness and texture.
Ingredients: 200g noodles. 2 tbsp hoisin sauce. 2 tbsp peanut butter. 2 tbsp soy sauce. 1 tbsp rice vinegar. 1 tbsp maple syrup. 1 clove garlic, minced. 1 tsp grated ginger. 1/4 cup water. 1 cup mixed vegetables such as bell peppers, carrots, and broccoli, sliced. 2 green onions, sliced. 2 tbsp chopped peanuts, for garnish. 1 tsp sesame seeds, for garnish.
Instructions: Cook noodles according to package instructions. Drain and set aside. In a bowl, whisk together hoisin sauce, peanut butter, soy sauce, rice vinegar, maple syrup, garlic, ginger, and water until smooth. In a large skillet, heat the sauce over medium heat. Add the mixed vegetables and cook until tender, about 5-7 minutes. Add the cooked noodles to the skillet and toss until well coated with the sauce. Divide the noodles among serving bowls. Garnish with sliced green onions, chopped peanuts, and sesame seeds. Serve hot.
