We kicked off the harvest last Wednesday and have been busy making tea ever since! . Check out the action here in this “seijuki” machine. This is the final rolling stage! . In this stage, the tea gets its famous needle shape! . We are reducing the moisture content from around 30% down to about 10%. . The 🤚 is the best tool to judge the moisture content. It is a skill learned over time. There is definitely truth in the phrase “a Master’s touch.” . From here the tea will move to the final step and will be put into the drying machine (or “kansouki”) where it will be further dried until it reaches a 4-5% moisture content. .
