Paleo Zucchini Noodles - Paleo Recipe
A classic Italian dish that celebrates the tastes of summer is caprese salad. It's easy to make and tastes great: ripe tomatoes, creamy mozzarella, fresh basil, and a drizzle of olive oil and balsamic vinegar.
Ingredients: 4 ripe tomatoes. 1 pound fresh mozzarella cheese. 1/2 cup fresh basil leaves. 1/4 cup extra-virgin olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: Slice the tomatoes and mozzarella cheese into 1/4-inch thick rounds. Arrange the tomato and mozzarella slices on a serving platter, alternating and overlapping them. Tuck fresh basil leaves between the tomato and mozzarella slices. Drizzle extra-virgin olive oil and balsamic vinegar over the salad. Season with salt and pepper to taste. Serve immediately as a refreshing and delicious Caprese salad.
