A quick and delicious one-pot lasagna soup that captures all the flavors of traditional lasagna in a cozy bowl. Perfect for a comforting weeknight dinner!
Ingredients: 1 lb ground beef. 1 onion, chopped. 3 cloves garlic, minced. 1 can 28 oz crushed tomatoes. 1 can 15 oz tomato sauce. 1 can 6 oz tomato paste. 4 cups beef broth. 2 cups water. 2 teaspoons dried oregano. 2 teaspoons dried basil. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/2 teaspoon dried thyme. 1 bay leaf. 2 cups uncooked lasagna noodles, broken into pieces. 1 cup ricotta cheese. 1 cup shredded mozzarella cheese. 1/2 cup grated Parmesan cheese. Fresh basil for garnish.
Instructions: Over medium-low heat, brown the ground beef in a large pot. Put in the minced garlic and chopped onion. Saut until the onions are soft. Add the tomato sauce, tomato paste, and crushed tomatoes and mix them in. Oregano, basil, salt, black pepper, thyme, bay leaf, and beef broth should all be added. Once the soup starts to boil, lower the heat and let it cook slowly for 20 minutes. Put in the broken lasagna noodles and cook them until they get soft. Put ricotta, mozzarella, and Parmesan cheese in a bowl and mix them together. Take the bay leaf out of the soup and pour it into bowls. Put a dollop of the cheese mix on top of each bowl. Add fresh basil on top and serve hot.
