Ingredients: 1 cup cornmeal. 1 cup all-purpose flour. 1/4 cup sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1 cup milk. 1/4 cup vegetable oil. 2 large eggs. 1 cup shredded Jalapeno-Jack cheese. 1/2 cup crispy bacon bits. 1/2 cup caramelized onions.
Instructions: Preheat your oven to 375F 190C and grease a 9x9-inch baking pan. In a large bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. In another bowl, whisk together the milk, vegetable oil, and eggs. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the shredded Jalapeno-Jack cheese, crispy bacon bits, and caramelized onions. Pour the batter into the greased baking pan and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
