I bought a bag of oranges a couple weeks ago because they were cheaper than usual, and one of my favourite things to bake is an orange loaf, so I had to use some of the oranges for that purpose.
Recipe under the read more - it's a really easy recipe. I've made it multiple times and it's always turned out good.
Orange Loaf
Ingredients:
210 grams (1 ½ cup) all-purpose flour
2 ½ teaspoons baking powder
18 grams (2 tablespoons) orange zest (2 oranges)
105 grams (½ cup) granulated sugar
2 large eggs
115 grams (½ cup) melted butter
180 grams (¾ cup) fresh orange juice (3 oranges)
Instructions:
Preheat the oven to 180°C. Grease a loaf pan and line the bottom and sides with parchment paper, about 5 cm of overhang on each side.
Put the sugar and orange zest into a large bowl and stir them.
Add the eggs and mix with a whisk until just combined.
Mix in the melted butter and orange juice.
Sift flour and baking powder into the wet mixture and stir until just combined.
Bake for 35-40 minutes or until a toothpick that is inserted to centre comes out clean.
After you remove the pan from the oven, let the cake stay in the pan for 20 minutes before removing and placing on wire rack to cool fully.
In the last post I was talking about oranges. Now here is the orange cake or buns - 10 mins preparation, 20 mins cooking, best buttered and eaten with a cup of tea to bring a smile to your face.
The mixture is so simple: 3 oz (75g) butter, 10 oz/275g self raising flour, rubbed together. Then add 3oz/75g sugar and grated rind of an orange. Beat one egg with 1 dsp marmalade and 1 dsp golden syrup or honey and stir this in. Finally and the orange juice and 2.5 fl oz/75 ml milk. Beat it all together for a few minutes till it is smooth.
Spoon it into 12 paper cases in a bun tin or put it into a large loaf tin or smaller round cake tin. There will be enough to make the buns and the small cake.
Bake at 350F/180C for 20 mins or twice that time if it is in a deep loaf tin.
The buns can be eaten straight from the oven, or left to cool they can be reheated by a short blast (10 secs each) in the microwave.
