Navel Orange Marmalade
Confiture d'oranges l'anglaise is a delicious orange marmalade with a touch of Scotch whiskey, inspired by Scotland. Orange sweetness and rich, smoky whiskey notes combine to create a flavorful, multipurpose jam that is perfect for a variety of applications.
Ingredients: 1 kg oranges. 750g sugar. 1 lemon, juiced. 1/2 cup Scotch whiskey. 1/2 cup water.
Instructions: Remove any seeds from the oranges by washing, peeling, and chopping them into small pieces. Put the chopped oranges, sugar, and lemon juice in a big pot. Give it a good two hours to sit so the flavors can combine and the sugar can dissolve. Stir thoroughly after adding the water and Scotch whiskey to the pot. After putting the pot on medium-high heat, raise the temperature to a boil. After the mixture reaches a boiling point, lower the heat to a simmer and let it cook for 45 to 60 minutes, or until the thickness of the mixture reaches the desired level. Stir from time to time to avoid sticking or burning. Carefully ladle the jam, leaving a little space at the top, into sterilized jars while it's still hot. Put the lids on the jars firmly. Let jam cool to room temperature and then store in a cool, dark location. As it cools, it will get thicker still. Savor your homemade Confiture d'oranges l'cossaise as a condiment for a variety of dishes or on toast or pastries!

Elevate your holiday feast with this Orange, Bourbon and Pecan Glazed Ham. The sweet and savory glaze, featuring orange marmalade, bourbon, and pecans, adds a delicious twist to a classic ham roast.
Ingredients: 1 Ham, fully cooked about 8-10 pounds. 1 cup Orange marmalade. 1/2 cup Bourbon. 1/2 cup Pecans, chopped. 1/4 cup Dijon mustard. 1/4 cup Brown sugar. 1 tsp Ground cinnamon. 1/2 tsp Ground cloves. 1/2 tsp Salt. 1/4 tsp Black pepper.
Instructions: Preheat the oven to 325F 163C. Score the surface of the ham in a diamond pattern with a sharp knife. In a saucepan over medium heat, combine orange marmalade, bourbon, chopped pecans, Dijon mustard, brown sugar, ground cinnamon, ground cloves, salt, and black pepper. Stir until well combined and heated through. Place the ham in a roasting pan and brush the glaze over the scored surface of the ham, allowing it to seep into the cuts. Cover the ham loosely with aluminum foil and bake in the preheated oven for 1 hour. Every 20 minutes, baste the ham with the pan juices and apply more glaze. Remove the foil during the last 30 minutes of baking to allow the ham to caramelize and develop a golden brown color. Once the internal temperature reaches 140F 60C, remove the ham from the oven and let it rest for 15-20 minutes before slicing. Serve the Orange, Bourbon and Pecan Glazed Ham slices with additional glaze on the side. Enjoy the succulent and flavorful ham with a delightful citrus, bourbon, and pecan glaze!
