Organic chocolate peanut butter cream shortbread tarts

Chocolate and peanut butter is a perfect match and tastes so decadent in these short bread tarts. Yes, shortbread tarts! This recipe is so easy to make and you will wow your guests with this sophisticated dessert! The chocolate peanut butter filling is so light and creamy, and the tart is so buttery, it literally melts in your mouth! I hope you enjoy the recipe! INGREDIENTS ( I use all organic ingredients)
Short bread tarts: 1 cup organic grass fed butter ½ cup raw powdered sugar 2 cups flour 1 tsp of Madagascar vanilla bean extract
Chocolate peanut butter cream filling: ½ cup organic grass fed butter ½ cup unsweetened peanut butter 2-3 cups of powdered sugar 3-4 Tbs of unsweetened cocoa (depends on how chocolaty you want it) ½ cup of chopped peanuts ½ cup of shaved dark chocolate
You will need a muffin tray that makes 12 muffins
INSTRUCTIONS:
Turn oven on to bake at 350 degrees F. Grease the inside of each muffin compartment on the muffin tray.
In a stand mixer, using a paddle attachment, combine sugar and butter (make sure butter is room temperature) and mix on low speed until smooth. Add vanilla extract and 1 cup of flour at a time, continue to mix on low speed until dough forms.
On a floured surface; roll out the dough using a rolling pin to about an inch thick and using a round cookie cutter that is bigger than the a single muffin cut out the dough and place it in the muffin tray pressing it down with your finger until it lines the inside of that muffin compartment. Repeat until each section of the muffin tray is lined with the shortbread cookie dough. I usually trim the top of each muffin section so it’s even and each cookie cup will be the same size.
Place the tray in the centre of the oven rack and back for 10-12 mins (keep your eye on it the whole time to ensure they don’t burn) they should be a very light brown.
Once cooked, remove from the oven and place on a cooling rack to cool completely before trying to remove them from the muffin tray.
Meanwhile, in a stand mixer with a whisk attachment, cream the butter, peanut butter and sugar together until smooth. Add in the cocoa powder and mix well. Taste and add more sugar or cocoa if you want it sweeter and more chocolatey. Whip on high spend until it looks light and creamy.
Fill a pipping bag with a star attachment and set aside.
To assemble:
Carefully remove each cookie cup from the muffin tray by lightly twisting from the top and pipe in the chocolate butter cream. Top with chopped peanuts and shaved chocolate and serve. You can also drizzle with melted chocolate or Carmel sauce!
