Over informed and paralyzed by too many choices
Have you ever done research for something, like a paper or a work assignment. I was always the person who did what I needed to do to get the assignment done. The end. I never spent extra time making sure that my opinion was well informed or that my research was varied and so on.
Now that I have decided to eat better, lose weight, and exercise more I’ve been trying to do better at the whole researching thing. The only problem is that researching healthy foods and beginner exercise routines has left me with so much information and no idea where to really start.
Vegan? Vegetarian? Paleo? Keto? No carbs? No sugars? 80/20? Weight lifting? Running? C25K? I feel like there are so many options and I don’t know where to start. Now I’m feeling paralyzed. Where do I start?
Recipe 1.
Something i created in the kitchen tonight. Was having a bad day but instead of binging like i usually would i tried to create my own thing..
so here it is:
Healthy peanut butter and coconut slice:
Base:
1/2 cup cacao powder
1/2 cup coconut oil
3 tablespoons of maple syrup
2-3 cups of shredded coconut
Topping:
1/3 cup coconut oil
1/2 cup crunchy or smooth peanut butter
1/4 cup maple syrup
1 tablespoon vanilla extract
For the base place all ingredients except for the shredded coconut into a saucepan and melt and and mix until combined. Then remove from heat and stir in shredded coconut until you get a mixture that you can easily press into the bottom of a pan. (Not to wet though). Place into freezer to firm
For the topping place all ingredients into saucepan and heat until mixture is smooth and without lumps. Then after the base has set firmly pour in the topping and return to freezer for 30mins or until firm.
To cut: heat knife beforehand. Very decadent. Serve with cream or something its very rich. Store in refrigerator.

Just made 3 eggs cooked in (organic) butter for breakfast... For anyone that knows me, this is a big deal and very scary/bizarre. All in the name of science!

Okay this weekend has been a roller coaster. I was crazy excited because I finally hit 169 (169.6) but I treated myself at my team sleepover friday night and saturday morning and then I had a binge session tonight. I am probably back around 170-171. I'm not worried, I know I can get back there this week, but I am just a little mad at myself for letting myself go.
Alsoooooo I decided to stop eating bread/crackers/wheat products. Maybe just for the week, but I want to try it. I kind of think I had a wheat problem. We shall see....
