Lunch is the finished Paleo raspberry almond muffins (as per my story), and some fresh ginger root tea. Recipe is from PaleoPlan and is heavily modified (I lessened the amount of coconut oil needed because I learned the hard way that too much of that stuff makes me *very* sick, instead of almond butter and almond extract I used Ghee and pure vanilla extract, I lessened the amount of almonds by a 1/2 cup and added a half cup of pumpkin seeds to make up for it, added a half cup of shredded unsweetened coconut, and I added a 1/4 cup of coconut flour to the mix in hopes it would do the same thing it did with the zucchini bread and make it less dense) so my verdict? We'll all the mods and additions ended up awesome, the muffins are def less dense and the pumpkin seeds+coconut makes them taste so good. My only issue is that I have only two sizes of muffin pans atm-smol and large. These ones here were the left over batter from the large pans so they came out just right, which is what I should have done for the entire batch (I was being lazy and didn't feel like spooning batter into a million tiny pan cups. I now regret my decision and am currently questioning my life choices), the larger ones (also as per my story) took too long to set in the middle so the outsides burnt. I ended up cutting off the burnt bits so I've mostly saved them at least, but there was a lot of delicious muffin loss during that venture and it became a bit of a waste.
