These Paleo tortilla wraps are a grain-free and delicious alternative to traditional wraps. Made with almond flour, they are perfect for those following a Paleo diet.
Ingredients: 2 cups almond flour. 2 large eggs. 2 tablespoons olive oil. 1/2 teaspoon sea salt. 1/2 teaspoon baking soda. 1 tablespoon water if needed.
Instructions: In a mixing bowl, combine almond flour, sea salt, and baking soda. In a separate bowl, whisk together eggs and olive oil. Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too dry, add a tablespoon of water and mix again. Divide the dough into 6 equal portions and roll each portion into a ball. Place a ball of dough between two sheets of parchment paper and flatten it with a rolling pin to create a tortilla. Aim for a thin and even circle. Heat a skillet over medium-high heat and lightly grease it with olive oil or coconut oil. Carefully peel off the top parchment paper from the tortilla and place the tortilla, parchment-side up, in the hot skillet. Cook for about 2-3 minutes on each side or until the tortilla is lightly browned and cooked through. Repeat the process with the remaining dough portions, adding more oil to the skillet as needed. Once cooked, fill the tortillas with your favorite Paleo-friendly ingredients, such as grilled chicken, avocado, lettuce, and salsa. Fold the tortillas in half and serve as wraps. Enjoy!
