Pancake muffins are a fun take on regular pancakes because they are baked in muffin tins. They are quick and easy to make, which makes them great for busy mornings for breakfast or brunch.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1/4 cup unsalted butter, melted. 1 large egg. 1/2 teaspoon vanilla extract. 1/2 cup blueberries optional. Maple syrup for serving.
Instructions: Preheat your oven to 350F 175C and grease a muffin tin or use paper liners. In a mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Gently fold in the blueberries if you're using them. Spoon the batter into the muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Serve with maple syrup and enjoy!
