Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 cup unsalted butter, melted. 2 large eggs. 1/2 cup milk. 1 1/2 teaspoons baking powder. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 1 cup diced apples peeled and cored. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 cup brown sugar for topping.
Instructions: Warm your oven up to 350 F 175C and put paper liners in a muffin tin. The melted butter and sugar should be mixed together in a bowl. Mix everything together well. To the butter and sugar mix, add the eggs, milk, and vanilla extract. Mix until it's smooth. Mix the flour, baking powder, salt, ground cinnamon, and ground nutmeg together in a different bowl using a whisk. Slowly add the dry ingredients to the wet ones while stirring them together. Add the apple dices slowly while mixing. Fill up each muffin tin cup about two thirds of the way to the top with muffin batter. Add a little bit of brown sugar to the top of each muffin for a crunchy, sweet topping. After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean. When you take the muffins out of the oven, let them cool for a few minutes in the pan before moving them to a wire rack to cool all the way through. Have fun with your Apple Pie Muffins.
