Instructions: Preheat the oven to 425F 220C. In a large bowl, toss the diced potatoes with olive oil until evenly coated. In a separate bowl, mix together Parmesan cheese, garlic powder, paprika, salt, and pepper. Sprinkle the Parmesan mixture over the potatoes and toss until the potatoes are evenly coated. Spread the potatoes out in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy. Garnish with fresh chopped parsley if desired before serving.
