Instructions: In a bowl, whisk together soy sauce, maple syrup, lemon juice, lemon zest, garlic powder, salt, and pepper to make the marinade. Add tofu slices and pineapple chunks to the marinade, ensuring they are well coated. Marinate for at least 30 minutes. Preheat grill to medium-high heat. Thread tofu slices and pineapple chunks onto skewers, alternating between them. Grill skewers for 5-7 minutes on each side, until tofu is nicely charred and pineapple is caramelized.
