These Paleo BBQ meatballs are a delicious twist on a classic favorite, made with grass-fed ground beef and flavorful Paleo BBQ sauce. Paired with creamy parsnip puree, it's a satisfying and wholesome meal that's perfect for a Paleo diet.
Ingredients: 1 lb grass-fed ground beef. 1/4 cup almond flour. 1/4 cup chopped onion. 1 clove garlic, minced. 1/4 cup Paleo BBQ sauce. 1 tsp smoked paprika. 1/2 tsp sea salt. 1/4 tsp black pepper. 2 large parsnips, peeled and chopped. 1/4 cup full-fat coconut milk. 2 tbsp ghee. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. In a large bowl, combine ground beef, almond flour, chopped onion, minced garlic, Paleo BBQ sauce, smoked paprika, sea salt, and black pepper. Mix until well combined. Shape the mixture into meatballs and place them on a baking sheet lined with parchment paper. Bake meatballs in the preheated oven for 20-25 minutes, or until cooked through. While the meatballs are baking, prepare the parsnip puree. Boil chopped parsnips in a pot of water until fork-tender, about 10-12 minutes. Drain the parsnips and transfer them to a food processor. Add coconut milk and ghee. Blend until smooth and creamy. Season with salt and pepper to taste. Serve the Paleo BBQ meatballs with parsnip puree on the side. Enjoy!
