It’s cold outside today (it snowed), but there’s no need for me to be cold inside. Might as well make a hearty meal. I don’t like spaghetti because I hate tomato sauce, but I do like tomatoes so I made turkey meatballs and roasted cherry tomatoes over a bed of roasted spaghetti squash. Italian seasoning (dried thyme, marjoram, basil, and oregano) 1 tsp. crushed red pepper flake, more if desired 1 tsp. salt 1 tsp. white pepper 1 tsp. fresh parsley, chopped 1 tsp. fresh cilantro, chopped 1 tsp. fresh basil, chopped 1 egg 1/4 c. almond flour 2 cloves chopped garlic 1 pint cherry tomatoes 1 tbsp. EVOO 1 tsp. Italian seasoning 1/2 tsp. fresh parsley 1/2 tsp. fresh basil 1 clove chopped garlic 1 spaghetti squash EVOO Salt and pepper Directions: Preheat oven to 400°F and line a baking sheet with parchment paper. On a cutting board, cut the ends off of the spaghetti squash. Cut the spaghetti squash in half, lengthwise. Season flesh side with olive oil, salt, and pepper. Place flesh side down on parchment paper and place in the oven for 30-45 mins depending on desired level on roastedness (that’s not actually a word). In a medium bowl combine all the ingredients for the meatballs with your hand. Form nice sized meatballs (should yield 6-8) and place on another parchment lined baking sheet. Drizzle with olive oil. Once spaghetti squash is done remove from oven and remove the flesh with a fork. Place meatballs in the oven for 20 minutes. While meatballs are in the oven combine all the ingredients for the tomatoes. After 20 minutes remove the meatballs from the oven and turn them over. Place the tomatoes on the same baking sheet around the meatballs. Return the pan to the oven for 10 minutes or until the meatballs reach an internal temperature of 165°F and the tomatoes begin to split. Plate it and eat good!

Oh my god. This shepherd's pie from @perchancetocook is PHENOMENAL. I switched it up a bit by roasting the cauliflower and adding ghee when I was mashing the cauliflower and potatoes together. I also left out the diced tomatoes in the beef. This Spicy Pork Meatballs and Sesame Noodles Salad is a delicious and satisfying Paleo and Whole30-compliant dish. The spicy pork meatballs are paired with sesame-infused zucchini noodles and a flavorful dressing, creating a perfect combination of flavors and textures.
Ingredients: 1 lb ground pork. 2 cloves garlic, minced. 1 tsp ginger, minced. 1 tsp red pepper flakes. 1 tsp salt. 1/2 tsp black pepper. 2 tbsp coconut aminos. 2 zucchinis, spiralized into noodles. 1/4 cup coconut oil. 2 tbsp sesame oil. 2 tbsp tahini. 2 tbsp apple cider vinegar. 1 tbsp coconut aminos. 1 tsp honey optional for Whole30. 2 cups mixed greens. 1/4 cup chopped fresh cilantro. 1/4 cup sliced green onions. 1/4 cup chopped cashews.
Instructions: In a bowl, combine ground pork, minced garlic, minced ginger, red pepper flakes, salt, black pepper, and 2 tbsp coconut aminos. Mix well and form into meatballs. Heat coconut oil in a skillet over medium-high heat. Add the meatballs and cook until browned and cooked through, about 8-10 minutes. In a separate bowl, whisk together sesame oil, tahini, apple cider vinegar, 1 tbsp coconut aminos, and honey if using. In a large salad bowl, toss the spiralized zucchini noodles with the dressing. Add the mixed greens and toss to combine. Divide the salad among serving plates and top with the cooked pork meatballs. Garnish with fresh cilantro, sliced green onions, and chopped cashews. Serve immediately and enjoy!

A quick and simple way to prepare the classic Vietnamese beef stew, Bo Kho, using a pressure cooker that is Paleo-friendly. Tender grass-fed beef, flavorful spices, and wholesome veggies come together in this filling stew that's perfect for any occasion.
Ingredients: 2 lbs grass-fed beef stew meat, cubed. 2 tablespoons coconut oil. 1 onion, diced. 3 cloves garlic, minced. 1 tablespoon grated ginger. 1 tablespoon tomato paste. 2 carrots, sliced. 1 daikon radish, peeled and sliced. 1 can 14 oz diced tomatoes. 2 cups beef broth. 1 cinnamon stick. 3 star anise pods. 3 cloves. 1 tablespoon fish sauce. Salt and pepper to taste. Chopped fresh cilantro for garnish.
Instructions: Heat the coconut oil and switch the pressure cooker to saute. Add the minced garlic, grated ginger, and diced onion. Saut until aromatic. Brown the cubed beef stew meat on all sides after adding it. Cook for an additional minute after adding the tomato paste. Add the cloves, cinnamon stick, star anise pods, diced tomatoes, carrots, daikon radish, and fish sauce. To taste, add salt and pepper for seasoning. After shutting off the pressure cooker, leave it on high pressure for half an hour. When finished, carefully let go of the pressure and lift the cover. Top the Paleo Pressure Cooker Bo Kho with freshly chopped cilantro and serve hot. Have fun!
