I've been researching a lot about plant based meals/lifestyle. While I'm not ready to make the jump 1000% , my goal during the week is to now eat completely vegan. This is both for environmental health (look up how much water you save a day) and my own health, since, when I get stressed, I end up eating whatever is in my fridge- usually cheese with deli meat. Back in college I took a lot more time and put more energy into eating a diverse diet, with an assortment of veggies and fruit, but living in the city just makes that much less convenient. That is a poor excuse, however, not to feed my body foods that will benefit me. Today I have a homemade pasta sauce and cauliflower curry recipe on hand that I'm going to bulk make and eat for a few days. I also have a SUPER simple chili recipe to try towards the end of the week. I'm excited for the challenge!
