This colorful and tasty 6-Layer Mediterranean Dip is a great starter for parties or get-togethers. Each layer has its own taste and texture, combining to make a delicious mix of Mediterranean flavors. It's also gluten-free, vegan, and vegetarian, so it can be eaten by people with a wide range of dietary needs.

Ingredients: 1 can 15 ounces chickpeas, drained and rinsed. 2 tablespoons tahini. 2 cloves garlic, minced. 2 tablespoons lemon juice. Salt and pepper to taste. 1 cup hummus. 1 cup diced cucumber. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup sliced Kalamata olives. 1/4 cup chopped fresh parsley. 1/4 cup chopped fresh mint. Optional: vegan feta cheese, for topping. Pita chips or sliced vegetables, for serving.

Instructions: In a food processor, combine chickpeas, tahini, garlic, lemon juice, salt, and pepper. Blend until smooth to make the hummus layer. Spread the hummus evenly in the bottom of a serving dish. Layer diced cucumber over the hummus. Layer diced tomatoes over the cucumber. Layer diced red onion over the tomatoes. Layer sliced Kalamata olives over the onions. Sprinkle chopped parsley and mint over the olives. If desired, crumble vegan feta cheese over the top layer. Serve with pita chips or sliced vegetables for dipping.
