Creamy Linguine Pasta al Limone is a delicious Italian dish hailing from Campania. The creamy lemon sauce adds a refreshing twist to traditional linguine pasta, making it a perfect choice for a light yet satisfying meal.
Ingredients: 350g linguine pasta. 2 lemons zest and juice. 200ml heavy cream. 50g butter. 1 garlic clove minced. Salt and pepper to taste. Fresh parsley chopped, for garnish. Grated Parmesan cheese optional, for serving.
Instructions: Cook linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside. In a large skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add lemon zest and juice to the skillet, stir well to combine. Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring occasionally. Add cooked linguine to the skillet and toss to coat the pasta evenly with the creamy lemon sauce. If the sauce is too thick, add reserved pasta water gradually until desired consistency is reached. Season with salt and pepper to taste. Serve hot, garnished with chopped parsley and grated Parmesan cheese if desired.
