Ingredients: 1 cup all-purpose flour. 2 large eggs. 1 1/4 cups milk. 2 tablespoons melted butter. 1/4 teaspoon salt. 2 ripe peaches, sliced and roasted. 1 vanilla bean, seeds scraped. 2 tablespoons granulated sugar. 1/2 teaspoon ground cinnamon. Whipped cream for topping optional.
Instructions: In a mixing bowl, combine the all-purpose flour and salt. In another bowl, whisk together the eggs, milk, and melted butter. Slowly add the wet ingredients to the dry ingredients, whisking continuously to create a smooth batter. Add the scraped vanilla bean seeds and mix into the batter. Heat a non-stick skillet over medium heat and lightly grease it with butter or oil. Pour a small amount of batter into the skillet, swirling it around to create a thin crepe. Cook the crepe for about 1-2 minutes until the edges start to lift and it's golden brown on the bottom. Flip the crepe and cook for an additional 1-2 minutes on the other side. Remove the cooked crepe from the skillet and repeat the process with the remaining batter. In a separate bowl, mix the roasted peach slices with granulated sugar and ground cinnamon. Place a few slices of the roasted peach mixture in the center of each crepe. Fold the crepe over the filling, and if desired, top with whipped cream. Serve the roasted peach crepes spiced with vanilla bean immediately. Enjoy!
