Cacio e Pere Ravioli is a delightful blend of sweet pears, creamy ricotta cheese, and savory pecorino cheese, wrapped in delicate wonton wrappers. The addition of honey and sage adds a depth of flavor that makes this dish truly special.
Ingredients: 1 packet of store-bought wonton wrappers. 2 ripe pears, peeled, cored, and diced. 200g ricotta cheese. 100g grated pecorino cheese. 1 tablespoon honey. 1 tablespoon chopped fresh sage. Salt and pepper to taste. 1 egg, beaten.
Instructions: Diced pears, ricotta cheese, pecorino cheese, honey, chopped sage, salt, and pepper should all be mixed together in a bowl. Put a small amount of the pear and cheese mix on a wonton wrapper. Beat an egg and brush it around the edges of one wrapper. Then, put another wrapper on top and press the edges together to seal. Do it again with the rest of the filling and wrappers. As the water boils, add salt to a large pot. With care, add the ravioli to the boiling water. Cook for three to four minutes, or until they float to the top. With a slotted spoon, take the ravioli out of the water and let them drain well. Add extra grated pecorino cheese and a drizzle of honey to the top of the hot dish before serving.
