No Waste Tips: Whole Peeled Tomatoes
If you find yourself walking from the market with heaps (and I mean kilos!) of fresh tomatoes, because they were so lovely, so red, and also so cheap, and even though yesterday and today have been way cooler in comparison to the recent, persistant heat wave, you can’t escape preserving. Now, making Whole Peeled Tomatoes is very simple, and if you have tomatoes, water, and lemons, you have all you need. You will also need a bit of time, but think about opening a jar of these in the gloomy winter days, to make pasta, it will be like a snippet of Summertime! Not the same feel with a store-bought can!
Ingredients (makes 2 (1-quart) jars):
20 just ripe Roma tomatoes
1 large juicy lemon
Fill a large pot to 3/4 with water and bring to the boil.
Fill an even larger pot to 3/4 with water and bring to the boil. Add two 1-quart preserving jars and their lids. Boil a dozen of minutes to sterelise.
Meanwhile, rinse tomatoes. With a paring knife, cut a small cross at the bottom of each. Add tomatoes to the first pot of water, and boil, 3 minutes.
In the meantime, fill a large bowl to 3/4 with ice water and ice cubes.
After 3 minutes, using a slotted spoon, transfer tomatoes from pot to ice bath. Let cool, a few minutes.
Boil water in a kettle.
Carefully remove preserving jars and lids from the pot of boiling water, and dry them thoroughly. Squeeze the juice of half a lemon at the bottom of each jar.
Now that the tomatoes have cooled, easily peel of their skin, and fill each jar with 10 tomatoes. Wipe the rim and sides with paper towel, and top tomatoes with boiling water, leaving about 1/2″ at the top. Carefully and tightly close with lids. And return to the larger pot of water. Boil, covered, for 45 minutes, to sterelise.
Remove from heat and remove pot lid. Let cool completely before carefully removing the jars from their water bath, and drying them.
Store Whole Peeled Tomatoes in a cool, dark place, until ready to use.
