You know how the gods will never change. So Percy Jackson sees this and goes like " welp. Someone has to maintain order". It's not out of nowhere either. He is like 30 or 32 when he decides. Because we all know Percy is about defining common sense in every magical sense.
Before that, he helped newer demigods. Expanded camp and learned a little bit of democracy by working at a public job, like a café or something that deals with people. Tride being a biologist, didn't work. Took a year of helping sea creatures, slaying monsters, and definitely every Saturday he would visit his mom and sister and bond with Paul with stupid jokes. Paul definitely makes dad jokes .✨️Family bonding ✨️
At camp he would be that weird uncle/ cousin that knows shit ton of things. Some random facts about how to kill a monster, pranks, random things he learned about flowers when trying to gift his mother.✨️random facts ✨️
Or maybe also the camp mom or dad ??!!!! Omg! I can see it !! He is that kinda person!!!

He would definitely bake something. The blue cookies, muffin, etc. Teach them sword fighting, surviving 101. Gardening. So many fucking thing! He's an authority or parental figure. Cause everyone has issues and ✨️trauma✨️

Maybe he becomes this mysterious entity that manipulates small things that turn into a big help
He probably would have children, probably blessing mothers who can't have children but want them. And abandoned and abused kids. ( he would put a spell of protection and strength) and adopt them
I'd imagine him having some tattoos on his arms. Really badass
