Ingredients: 2 cups dried navy beans, soaked overnight. 1 onion, diced. 1/2 cup molasses. 1/3 cup brown sugar. 1/4 cup ketchup. 2 tablespoons Dijon mustard. 1 teaspoon smoked paprika. 1 teaspoon garlic powder. 1/2 teaspoon black pepper. 4 cups vegetable broth. 1 bay leaf. Salt, to taste.
Instructions: Drain and rinse the soaked navy beans. In the Instant Pot, combine soaked beans, diced onion, molasses, brown sugar, ketchup, Dijon mustard, smoked paprika, garlic powder, black pepper, vegetable broth, and bay leaf. Secure the lid and set the Instant Pot to high pressure for 25 minutes. Once cooking is complete, allow natural pressure release for 10 minutes, then manually release any remaining pressure. Carefully open the lid, and stir the beans. Add salt to taste. Serve the pressure cooker baked beans hot, garnished with chopped parsley if desired.
