Artichoke hearts, basil pesto, and lemon flavors come together in this slow cooker recipe to make tender chicken breasts. Adding cauliflower rice to it makes it healthy and low in carbs.
Ingredients: 4 chicken breasts. 1 cup artichoke hearts, chopped. 1/2 cup basil pesto. 1 lemon, juiced and zested. 2 cloves garlic, minced. Salt and pepper to taste. 2 cups cauliflower rice.
Instructions: In a slow cooker, place chicken breasts at the bottom. Top the chicken with chopped artichoke hearts, basil pesto, minced garlic, lemon juice, and lemon zest. Season with salt and pepper. Cover and cook on low for 4-6 hours or high for 2-3 hours until the chicken is cooked through and tender. In the last 30 minutes of cooking, add cauliflower rice to the slow cooker and mix well. Serve the chicken over cauliflower rice, spooning any remaining sauce from the slow cooker over the top.
