Refried beans that are tasty and easy to make are cooked slowly in a crockpot, giving them a creamy texture.
Ingredients: 2 cups dried pinto beans, rinsed. 1 onion, chopped. 4 cloves garlic, minced. 2 jalapeno peppers, seeded and chopped. 6 cups water. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/2 teaspoon cumin. 1/2 teaspoon chili powder.
Instructions: In a slow cooker, combine all ingredients. Cover and cook on high for 6 hours or until beans are very tender. Using a potato masher or immersion blender, mash beans to desired consistency. Adjust seasoning if needed. Serve hot as a side dish or as a dip. Enjoy!
