These cute Peter Rabbit-themed cookies are ideal for a Peter Rabbit-themed party. The brightly colored cookies feature iconic characters and are sure to please both children and adults.
Ingredients: 2 1/2 cups all-purpose flour. 1/2 teaspoon salt. 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. Food coloring green, blue, orange. Royal icing white, green, blue, orange.
Instructions: Mix the flour and salt together in a bowl. When the butter is soft, put it in a separate large bowl and mix it with the sugar until it is light and fluffy. Add the egg and vanilla extract and mix them in well. Mix the dry ingredients into the wet ingredients one at a time until the dough comes together. Cut the dough into equal pieces and color each one with the food coloring of your choice. Put each piece of colored dough in its own piece of plastic wrap and put it in the fridge for about an hour. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. On a floured surface, roll out each color of dough piece to about 1/4-inch thickness. Cut the rolled dough into shapes with cookie cutters that look like Peter Rabbit. Leave some space between the cookies when you put them on the baking sheet that has been prepared. After the oven is hot, bake for 8 to 10 minutes, or until the edges are just beginning to turn golden. Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. As soon as the cookies are cool enough to handle, use royal icing to add Peter Rabbit designs and details. Wait for the royal icing to harden before you serve or package the cookies.
