Went to the farmers market at the Common Ground Fair yesterday and, among other things, got pie pumpkins. So today I'm making pumpkin puree.
First, cut open the pumpkin and remove the seeds and stringy bits. Then cut it into chunks.
The steam it until a fork can easily go through.
Then let it cool, scoop the soft insides off the rind, mash it up with a large fork or potato masher.
Then I portion it into 1-cup servings, and freeze until I'm going to make cookies or bread or whatever.
I got 5 cups from 2 pie pumpkins.
