Caribbean Rum cake as the 7th day in Baking through the Great British Bake Off 2016 book. It turned out very good, we all loved it, especially with the pineapples on top. One surprising thing was to add the melted butter towards the end of the mixing. Also you might want to do the cream chantilly in smaller batches, as to be able to serve it fresh, just before eating so the cream won’t separate.
