Pistachio Bread

1 Pkg. White Cake Mix

1Pkg. Instant Pistachio Pudding

1/2 Cup of Sugar

1/2 Cup of Water

1/2 Cup of Oil

1 Cup of Sour Cream

4 Eggs (Beat eggs separately)

Mix all ingredients together.

Butter and flour jellyroll pan. Spread in pan. Top with cinnamon and sugar.

Bake @ 350 degrees for 35-45 Minutes.

Pistachio Pudding Banana Bread

Pistachio is perfect.  And festive.  And this is actually not even that unhealthy of a snack!

If you're not a fan of cheating on your recipes, neither am I...but I did use pudding mix from a box in this one.  Just be forewarned.

Oh also it's delicious.  So be wary of that as well.

6 tbsp butter, browned

2 cups flour

1 1/2 tsp baking soda

1 small box Jello brand pistachio pudding mix

1/2 cup white cocoa powder (if you don't have this, use brown sugar)

2 eggs

1/2 cup yogurt

2 mashed bananas

Preheat oven to 350 deg F.

Brown the butter by melting over medium heat until it crackles. Pour into a relatively large bowl and set aside. 

In a large bowl, combine flour, baking soda, white chocolate, and pistachio mix.

Add yogurt to the butter and whisk to combine.  Add eggs, then mashed bananas.

Add the latter ingredients to the dry ones, and mix well.

Grease a bread pan with nonstick spray and pour batter in.  I chose to sprinkle some raw sugar over the top, which made a nice crust.

Bake for 50 - 60 minutes (probably closer to the low end).

If only the slice picture looked as pretty as the whole loaf.
