Smoky Mountain: 5 out of 8
So weird... we were both very “MEH” about this whole visit. BUT we had committed to hitting all the pizza places in Boise, and Smoky Mtn is on the list so... off we go... and this is where we were so pleasantly surprised: generic crust, generic sauce, generic cheese BUT perfectly balanced = a pretty darn good cheese pizza! Also, in the photo above, we capture what Nash refers to as “The Flop” - the way the slice bends when held correctly (and this is why Chicago Pizza is really a casserole... but i digress). Great “FLOP”! There was a lovely Lake of Grease in the center, the crust was crispy on the exterior, soft on the interior. What we realized was that it’s not necessarily about the “greatness” of the individual components, but it is the balance of those components and the bake that is key. SO, very low expectations, super pleasantly surprised... well done and really worth the price.
