A delightful fusion of pizza and salad, this Hummus + Goat Cheese Arugula Pizza Salad is a perfect blend of Mediterranean flavors. Creamy hummus, tangy goat cheese, and a fresh arugula salad with cherry tomatoes, red onion, and Kalamata olives make for a unique and delicious meal.
Ingredients: 1 pizza dough store-bought or homemade. 1/2 cup hummus store-bought or homemade. 1 cup crumbled goat cheese. 2 cups fresh arugula. 1/4 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 1/4 cup Kalamata olives, pitted and sliced. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Preheat your oven to 450F 230C. Roll out the pizza dough on a floured surface to your desired thickness. Transfer the rolled-out dough to a baking sheet or pizza stone. Spread a layer of hummus evenly over the pizza dough, leaving a small border around the edges for the crust. Sprinkle the crumbled goat cheese over the hummus layer. Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned. While the pizza is baking, prepare the salad. In a bowl, combine the fresh arugula, cherry tomatoes, red onion, and Kalamata olives. In a separate small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper to taste. Once the pizza is done, remove it from the oven and let it cool slightly for a few minutes.
