Ingredients: 1 head romaine lettuce, chopped. 1 cup croutons vegan-friendly. 1/4 cup vegan Caesar dressing. 2 tablespoons nutritional yeast. 1 tablespoon capers, drained. 1 tablespoon lemon juice. 1 tablespoon olive oil. 1 clove garlic, minced. Salt and pepper, to taste.
Instructions: To make the dressing, mix the nutritional yeast, lemon juice, olive oil, minced garlic, salt, and pepper in a small bowl with a whisk. Cover the chopped romaine lettuce with the dressing and toss it around in a big salad bowl. Toss the croutons and capers together gently after adding them. Serve right away, and if you want, top with more nutritional yeast or black pepper.
