A creamy and flavorful vegan Caesar dressing that is oil-free and easy to make. Perfect for salads, wraps, or as a dipping sauce.
Ingredients: 1/2 cup raw cashews. 2 tbsp nutritional yeast. 1 tbsp Dijon mustard. 1 clove garlic, minced. 2 tbsp lemon juice. 1/4 cup water. Salt and pepper to taste. Optional: 1-2 tbsp capers for extra flavor.
Instructions: Soak cashews in hot water for 15 minutes, then drain. In a blender, combine soaked cashews, nutritional yeast, Dijon mustard, minced garlic, lemon juice, and water. Blend until smooth. Season with salt and pepper to taste. If desired, add capers and pulse a few times to incorporate. Transfer dressing to a jar or container and refrigerate until ready to use.
