If there’s a vegetable that needs help is the endive. I’m loving having it with a combination of roasted walnuts, Medjool dates, and my own home-preserved lemons (fat, sweet, acidic & salty) here blended to a crumble, just as if you were about to make energy balls. Grilling the endives and pairing them with something creamy, like a white bean purée, also balances their bitterness.
