the lunch situation for today 😛 before veganism, I was making salads all sorts of wrong 👎🏼 a salad is not just lettuce and dressing, that is soooo boring and not satisfying 🙅🏼 throw beans, quinoa, peppers, tomato, rice, avocado, spinach, romaine, chickpeas, carrot, etc. ✨ seriously, your possibilities are endless! 💭 with all the colors and flavors, you will not need to dump dressing all over your salad to make it taste good 🌿 salads are quick, easy, and a simple way to pack in loads of nutrients 🌞 10/10 would recommend for when you’re on the go, need something for school or work.. 👅 I change it up every time to keep my tastebuds excited 😏 for lunch today I chopped up some romaine and spinach (like my spinach finely chopped), tosses in quinoa from last night, cooked some mushrooms in the microwave, chopped up some cucumber and a tomato, put avocado chunks and shredded carrots (put on after the pic) on the top and dressed it with half a lemon 🍋 all the different flavors had me falling in love 💗
Today's lunch was a East Thai- Indian - Me throw together ✌️young green soybeans called Edamame 🤗, sweet potato leftover curry, mint, parsley (no coriander tho), pomegranate, sesame, avo and a sweet coconut drizzle for even more flavors xD. Is there anything you'd love to add? #plantsarefuel Since I still get asked 'eda-whaty?' Here is a little round up: Edamame soybean's flavor is nutty, buttery and highly fresh. They contain all essentiell aminos, are full of fiber, carbohydrate, various, low levels of fat and sugar. Rich in various minerals such as calcium, iron, magnesium, zinc and manganese. ✌️ Edamame can be found in the frozen vegetable section of the supermarket or grown in garden #harvestgoals. Finally home, exhausted and tired, enriched and happy of the past two days. Special Thanks for a wonderful evening at @anjoy_restaurant with wonderful people @lovelyeevi , @plantbasedali_ , @sheloveseating , @mari.linni , @yolcsita_eats . We had a variety of currys, steamed veggies, fermented veggies, flying noodles (ever heard before?) lotus seeds and refreshing drinks. It was yummmilicious. one pan mexican quinoa 🌿 whipped this up last night and had it for lunch again today, even better the second time (with avocado 😍). whole plant foods honestly make me feel alive ⚡️ fueling your body with vibrant, nutritious foods does wonders for your body 💓 not even kidding. one pan mexican quinoa: 1 tablespoon olive oil 2 cloves garlic, minced 1 jalapeno, minced 1 cup quinoa 1 cup vegetable broth 1 (15-ounce) can black beans, drained and rinsed 1 (14.5 oz) can fire-roasted diced tomatoes 1 cup corn kernels, frozen, canned or roasted 1 teaspoon chili powder ½ teaspoon cumin Kosher salt and freshly ground black pepper, to taste 1 avocado, halved, seeded, peeled and diced Juice of 1 lime 2 tablespoons chopped fresh cilantro leaves directions: * Heat olive oil in a large skillet over medium high heat. Add garlic and jalapeno, and cook, stirring frequently, until fragrant, about 1 minute. * Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder and cumin; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until quinoa is cooked through, about 20 minutes. Stir in avocado, lime juice and cilantro. note: this is the original recipe. I didn’t use salt, pepper, oil or jalapeño (didn’t have any)
#repost of this delish nicecream parfait 👅💦 // So sorry for being MIA lately. Life was taking a real toll on me 😞 The past few weeks I’ve been stressed to the max. It got to the point where I could not sleep or eat without it making me sick to my stomach. However, I am slowly starting to feel better 🌞 like I stated in my Instagram story, I have switched my major from ultrasound to elementary education. I realized I was not excited whatsoever to learn about ultrasound. I was not passionate about it at all. I thought I should do it because I had no other idea what to do and the money was good. Listen to me when I say money does not equal happiness.
The amount of joy I felt today after I switched showed me how wrong it was for me. I should be excited and get butterflies for what I want to do with my life. With this path I’m taking now, I will get to help/inspire young children and have time for travel and adventures. I am a people person and I love helping out others. I currently work in a daycare through the schools where I live and I am always excited to go. I have never wanted my life to revolve around my job and I never want to wake up hating my life. If their are some of you who are in a similar position, I’m here to tell you it is okay to change your mind (I changed mine 3 times so far). You are young and it is okay to not have your whole life figured out. Everyone’s path is different. Just make sure your path makes YOU happy.

A delish nicecream parfait was breakfast this morning ✨ bottom layer was reg nicecream, then strawberry jam, granola, peach and strawberry nicecream which was topped with a few blueberries 💦it was 20°F this morning, but that certainly didn’t stop me from enjoying this yumminess!
Btw, I had a physical today for a job I’ll be starting next week and they did a blood test 💉 just wanted to let you know everything was normal 😎 haven’t had a blood test done for quite awhile so thought I would share! Have a wonderful evening lovies 💗
