My understanding was that the undead are only the norm in certain parts of the Dark Souls universe. Specifically, Lordran and Drangleic, which are presumably the same area centuries apart. In the asylum where you start your journey in DaSo1, Undead are not considered normal which is why they're rounded up.

Ah yes sure, that is due them being (forcefully) taken to Lordran/Drangleic.

During Lordran's time, the undead were known as the Chosen and they were taken into the Asylum more so the prophecy/events of DkS 1 would be more likely to happen. During Drangleic's, the undead are drawn to the place due Shanalotte's presence.

But taking all "humans" into consideration, it's safer to say that there are more humans than undead.

How the curse actually targets humans so they become undead I'm not sure.
