Comforting and tasty, this Slow Cooker Pork Cassoulet is made with soft pork, savory sausage, creamy cannellini beans, and herbs and vegetables that smell great. Great for a cozy night in, this hearty meal will fill you up!
Ingredients: 1 lb boneless pork shoulder, cubed. 1 lb smoked sausage, sliced. 3 cans 15 oz each cannellini beans, drained and rinsed. 1 onion, diced. 4 cloves garlic, minced. 2 carrots, diced. 2 stalks celery, diced. 2 cups chicken broth. 1 can 14.5 oz diced tomatoes. 2 bay leaves. 1 tsp dried thyme. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Put the pork shoulder, smoked sausage, cannellini beans, onion, garlic, carrots, and celery in a slow cooker. Mix in the tomato chunks, bay leaves, dried thyme, salt, and pepper. Mix things together well. Put a lid on top and cook on low for 8 hours or high for 4 hours, until the pork is soft and the flavors blend. Take out the bay leaves and, if necessary, change the seasonings before serving. Add chopped fresh parsley as a garnish. Enjoy while hot!
