Ingredients: 3 medium potatoes, thinly sliced. 2 cups fresh spinach leaves. 2 tablespoons vegetable oil. 1 teaspoon cumin seeds. 1 teaspoon mustard seeds. 1 teaspoon red chili powder. 1/2 teaspoon turmeric powder. 1/2 teaspoon garam masala. Salt to taste. Fresh cilantro leaves for garnish.
Instructions: Heat vegetable oil in a large pan or wok over medium-high heat. Add cumin seeds and mustard seeds. Saut for 30 seconds until they start to sizzle and pop. Add thinly sliced potatoes to the pan. Stir-fry for about 10 minutes until they become golden and crispy. Sprinkle red chili powder, turmeric powder, garam masala, and salt over the potatoes. Stir well to coat them evenly with the spices. Add fresh spinach leaves to the pan and continue to stir-fry for another 2-3 minutes until the spinach wilts and becomes crunchy.
