Ingredients: 1 lb ground pork. 1/4 cup fish sauce. 2 tablespoons soy sauce. 2 tablespoons rice vinegar. 2 tablespoons sugar. 3 cloves garlic, minced. 1 teaspoon ground black pepper. 1/2 cup chopped green onions. 1 cup fresh mint leaves. 1 cup fresh cilantro leaves. 1 lime, cut into wedges. 8 oz vermicelli noodles, cooked and drained. 4 cups shredded lettuce. 2 carrots, julienned. 1 cucumber, thinly sliced. 1/4 cup crushed peanuts. Sriracha sauce to taste.
Instructions: In a bowl, mix ground pork, fish sauce, soy sauce, rice vinegar, sugar, minced garlic, black pepper, and chopped green onions. Form the mixture into small meatballs. Heat a grill or grill pan over medium-high heat. Grill the pork meatballs until cooked through and slightly caramelized on the outside. Prepare vermicelli noodles according to package instructions. Drain and set aside. In serving bowls, assemble a bed of shredded lettuce, julienned carrots, and sliced cucumber. Top the vegetables with grilled pork meatballs and cooked vermicelli noodles.
