Mashed Turnip with Spices
Think about making mashed turnips as substitute for mashed potatoes to change up the dinner fare and lower your carbs - it’s true! They have a little more tang than potatoes but are just as satisfying. Turnips take longer than potatoes to cook so start this process a little earlier than ordinarily.
Here’s how...
Just peel, cut 3 large turnips into small diced pieces, then pop them into salted water (4 c. water, 1 t. salt) as you would for potatoes. Bring to a boil, cover and cook until the turnips are tender (spell that easily mashed). Drain the excess water off, mash, add a splash of milk, 3 T. margarine, 1 t. Chinese Five Spice* - mix well and serve to your hungry gang. This is great served with a slice of roast pork, crunchy green salad, and sliced fresh pears on the side.
*I found the Chinese Five Spice at my local grocers on the shelf with the rest of the pre-packaged spices.
