Family friendly Prawn Pad Thai 🥡🥢 That’s your Saturday night #fakeaway sorted 💫 Recipe below: ~ 250g rice noodles 4 tbsp vegetable oil 2 garlic cloves, crushed 2 tbsp ginger, grated 1 pack uncooked king prawns 1 small broccoli, florets Large handful of frozen peas 2 eggs (lightly beaten) 2 tbsp brown sugar 3 tbsp fish sauce 3 tbsp lime juice 2 spring onion, finely chopped Handful of peanuts, crushed (optional) ~ 1. Soak the noodles in boiling water for 5 mins then drain and set aside. 2. Heat a wok or non stick pan over high and add the oil. Toss in the garlic, ginger and prawns and stir-fry for a few minutes, or until the prawns are cooked. 3. Remove the prawns from the wok, add a splash more oil and the broccoli and cook for a few mins. Stir in the egg and cook for a minute or so. 4. Toss in the frozen peas, drained noodles, sugar, fish sauce, lime juice and prawns, and cook for 2 mins. 5.
