Migas a la Mexicana. ———— In different areas of Mexico, migas is a traditional breakfast dish consisting of corn tortilla strips fried on a pan or griddle until almost crispy, to which eggs are then added to create a scrambled egg/fried tortilla mixture. For those that don’t know, I am a Latino, and an advocate for the Latino community in Washington DC. I was a guest speaker/presenter at the DC based culinary school that advocates for workforce development in the Latino community. La CocinaVa is a non-profit organization offering Latino immigrants a fully funded, 13-week bilingual course that provides job training, culinary certification, life skills, English-language instruction, and job placement.
