Every once in a while I get word cravings. Today I was craving schnitzel; but not any ordinary schnitzel. I first tasted zigeunerscnhitzel (gypsy schnitzel) when I was stationed in Germany. The sauce had a smokiness from smoked paprika and a sweetness from sweet peppers and onions. The local imbiss I would frequent would serve it up alongside pommes (fries) or kartoffelsalat (potato salad). This dish takes me back!
